Tasty treats like this await you if you win tickets here to Taste of the Nation...

No, I don’t know what that is but you might if you went to last year’s Share Our Strength’s Taste of the Nation. Last week I posted about Taste of the Nation and this week I’m doing it again. No, I’m not a broken record because this time I’m giving away two free tickets to this wonderful event! Considering that tickets to TOTN start at $75 a pop — it’s a pretty exciting giveaway.

All you have to do to win is comment here about the best meal you prepared recently. See? It’s not hard. I don’t want to add any more stress to your life but I do want to know what you’ve been eating. Just because.

I have a lucky number in mind. In fact, I’ve written it down in one of my many notebooks. Promise. The lucky number person to post here wins two complimentary tickets to this year’s TOTN. I’ll announce the winner/s early next week. Until then tell everyone you know to get over here and comment to win. Just so I have proof I’m telling my coworkers the number since they’re disqualified anyway…

    Last night I made miso and ginger glazed grilled tilapia with roasted mushrooms and asparagus. Springy and delicious.

    My comments don’t count — I’ll subtract them from the winning #. Vietnamese style meatloaf with noodles and miso ginger glazed tilapia with roasted veggies both sound so good. I’m making dinner right now…well not RIGHT now since I’m typing but good good smells coming from the kitchen. Back to it.

    I made tofu peanut satay (first time ever) with broccoli, cauliflower and carrots over a bed of brown rice. It was amazing.

    ad hoc fried chicken, coleslaw and potato salad. chocolate bouchons for dessert!

    Ungh, I *so* want to go, but can’t afford it just now. Grrr… Anyhow, the best meal I made in a while was just last night: Rib-on pork chops (from my pig butchering adventure) stuffed with italian prunes and served with roasted baby potatoes (and garlic!), and some lovely fresh asparagus. It’s also the first meal of the season where every ingredient was *fresh* from the Farmers’ Market or farm. <3 !

    I invited a chocolatier, a food blogger, a literary festival president, and a photographer over and we made tamales, about 120 of them. What with the whipping of butter, mixing of masa, cleaning of corn husks, and chile-ing of fillings, you might as well make it a party! 1st filling: Beef chuck roast with a wicked New Mexican chile sauce. 2nd: Cheated with grocery store rotissrie chicken + Renfro’s green salsa. 3rd: Veggie filling of grilled corn, homemade black beans, and char-roasted Anaheim chilies, plus queso fresco. And a big pitcher of Hop Works IPA.

    We had a really fantastic crispy chicken with a parsley lemon sauce and roasted potatoes last week, it was beautiful and delicious!

    These are all a little bit of torture to read while at my desk with only cold, leftover noodles to snack on. Just saying. Inspiring for dinner tonight though…

    I wrestled a box from the freezer last night…The one and only Totino’s three cheese pizza…Removed plastic wrapper, as per instructions, then prepared the ever necessary “fourth cheese”. Our own Tillamook pepper jack. It is absolutely key to add fresh grated cheese. Cooked it till it was just bubbly in the center and slightly brown. It is only a matter of coincidence that my wine also came from… a box.

    I think the best meal I prepared this week was shrimp stir fry with whatever I found in the fridge. It was fantastic.

    I made a delicious pork tenderloin with tons of veggies and home made biscuits for easter. So delicious!

    Oops! I guess I just figured out how to do it. My recent best meal was just last night. For starters, we had guacamole and mango margaritas. The main course was Rick Bayless’ Grilled Shrimp with Mexican Chimichurri. Accompanying the shrimp was a poblano, potato and corn gratin, which I got from the April issue of Bon Appetit. An excellent meal that I’m sure to make again!

    One of favorite recipes that we made recently when my sister visited is a pasta dish with a sauce of canned tomatoes and sundried tomatoes along with shallots and lemon peel. The dish is combined with sauteed shrimp and feta cheese. Delicious!!

    Korean fried chicken. Double fried, sweet, hot and spicy. Gojujang, Korean chili paste, is the key to this dish.

    Eggs benedict with smoked tomato field roast (as the ham) and a portabella mushroom hollandaise

    Fresh home-made pasta with a morel cream sauce, followed by a Tails and Trotters pork shoulder braised in white wine and fennel.
